Spaghetti with Aubergine and Mushroom Sauce
Great pasta dish for any occation


Heat oil in a pan, add  onion, stir fry it till soft, add garlic, stir fry it for about a minute till it\'s cook, add mix herb and   diluted tomato paste, stir and simmer for at least 3 minutes, add mushroom and aubergine, stir  it and cover until it is done, add salt and pepper to taste, and extra chilli powder if you prefer spicy sauce.

In a separate pan, boil water, and cook spaghetti pasta until it\'s tender and al- dente.

Serve Pasta in a dish with the cook aubergine sauce on top, and sprinkle some grated parmesan cheese.

4 med Aubergines cut into cubes and soak in water to prevent discolouring
½ kg Button Mushrooms cut into cubes
2 med Onions finely chopped
1 bulb Garlic crushed
  chilli powder optional
250 g Tomato Paste diluted in
½ cup water for thinning sauce if required
1 tsb Dried mixed italian herbs 
1 tbsb Cooking oil 
1 pack Spaghetti 
  Grated Parmesan Cheese 
  Salt and pepper to taste
