Pork with Shrimp Paste and Coconut Milk (Bicol Express)
A tasty dish from the Bicol region of the Philippines
Heat oil in a pan, add jalapeño chillies, stir fry for few seconds, add minced ginger, and onion, stir fry until cook, then add garlic, stir fry it further until fully cook and done. Add the pork, stir fry it till it turns golden brown, then simmer for about 10-15 minutes over a low heat, add shrimp paste and vigorously stir it, till it fully mix with the other ingredients. Add Green peas, and coconut milk and simmer it again for further 10 - 15 minutes via low heat. For the last 5 minutes uncover the pan but still over a low heat, till the oil from coconut milk forms on top. Serve in a plate and garnish it with red chillies.
Normally goes with other dishes. serve in a hot steaming rice.
½ kg Pork fat trimmed and cut into cubes
2 tbsp Shrimp Paste
250 g Coconut Milk powder dissolve in 1 cup water
2 med Onion minced
1 bulb Garlic crushed
1 inch ginger root minced
1 tbsp Sunflower oil
5-8 Jalapeño peppers chopped
200 g Green Peas optional
1-2 Red Chillies to garnish
