Spicy Oxtail Stew in Tomato Sauce (Crock Pot)
A slow cooked tender stew

Procedure:

Pre- heat crock pot while waiting for the dish to be ready.

In a heated  deep bottom pan, fry chilli,  add onion, fry till it\'s done, add garlic, fry for about 1 minute. Add oxtail and stir until the colour changes. 

Add chopped tomatoes tomato paste, cinnamon stick, cumin, carrots and corn kernel. Add water if you want a thinner consistency, otherwise the tomatoes and oxtail releases it\'s own liquid and that will be enough to cook the meat under medium heat in a crock pot. When it\'s about to boil, transfer it to the crock pot on a medium setting, for about 4 hours. After cooking for 4 hours, the meat will be really tender,  pour in white wine, bring to a boil by setting crock pot to a high temperature. Any excess oil or will form on top of the crock pot, where you can get skim it with a ladle. Season with salt and pepper and serve hot.

Ingredients:
1 kg Oxtail fat trimmed and cut into 2\" slices
½ kg Tomatoes chopped
3  Carrots cut into half inch wedges
1 can Sweetcorn drained and washed
2 tbsp Tomato Paste 
2 lge Onions Puréed
1 bulb Garlic crushed
2 sticks Cinnamon 
1 tsp Cumin powder 
5  Red chilli peppers chopped
½ glass White wine 
1 tbsp Olive oil 
½ cup water (optional)
  Salt and pepper to taste
