Chicken Satay Skewers
Ideal cocktail and barbecue snacks
Procedure:
In a big mixing bowl, mix all the ingredients to marinate the chicken, cover and keep it in the fridge for at least 3 hours, best to marinade it overnight.
Thread marinated chicken in the bamboo skewer, pre- heat a grill or griddle pan and cook the skewers for 2-3 minutes each side.
For Satay sauce -
In a heated pan, add oil, onion and garlic, fry it till it\'s done. Add the remaining ingredients and simmer it for at least 10 minutes over low heat.
½ kg Chicken Breast cut into thin strips
1 tsp Tumeric powder
1 tsp curry powder
1 inch ginger root purée
1 bulb Garlic purée
1 tsp Cumin powder
1 tbsp Sesame Oil
1 tsp Mustard (powder or sauce)
Bamboo skewers soaked for 7-8 hours
Salt to taste
5 bulbs Garlic crushed
1 smalls Onion finely chopped or minced
5-8 tbsp Peanut butter
½ cup Concentrated coconut milk
1 tsp Brown Sugar
1 tbsp soy sauce
1-2 Fresh chillis finely chopped (optional)
1 tbsp Sesame Oil
