Minestrone with Turkey Meatballs
Turkey is an ideal substitute for red meats

Pre-heat  oven into fan assisted oven into 200 degrees 

Mix all Meatball ingredients in a bowl. In a baking tray, line it with aluminum foil then scoop a ball of mix meatball ingredients into the foil. Bake for 5-10 minutes  or until golden brown.

Heat oil in a deep bottomed pan, add chili if using, onion, and tomatoes. cook it for at least few 10 seconds. Add  boiled pinto beans, carrots, celery, 3 cups of water and bring it to a boil for at least 5 minutes over medium heat.  Add pasta, capsicum and add more water if you want it to be a bit more watery or soupy. Bring to a boil for another 5 minutes, add baked meatballs, chopped parsley and season it with salt and pepper. Serve hot! Enjoy!

For the Meatballs
½ kg Turkey mince 
 handful Chopped Parsley 
 handful Chopped Basil 
½ tsp Garlic Powder 
1/8 tsp Salt 
1/8 tsp Pepper 
1/8 tsp Chilli flakes 
For the Soup
½ cup Pinto Beans 
1 cup Celery Cut into Half inch lengths
1 cup Carrots Peeled and cut into small cubes
1  Capsicum Pepper Cut into small cubes
1 med Shallot Chopped
1 cup Chopped Tomatoes 
1 cup Pasta of your choice Boiled
4 cups water 
 handful Parsley Chopped
1  Birds Eye Chilli Chopped
2 tbsp Olive oil 
  Salt and pepper To taste
