Banana, Vanilla and Chocolate chip Cake
The basic muffin recipe can be adapted for so many flavours such as Ginger or Coffee or Mango or........

Method:

Preheat the oven to UK Gas 4 (180C or 350F)

Sieve the flour into a large bowl and mix in the sugar and add a pinch of salt. Add the egg, butter and water and stir in well. Keep stirring vigorously until the mixture is smooth , adding more water to thin out if necessary or more flour to thicken. the cake mixture should not be too runny but all the flour and sugar should be dissolved.

When the right texture is achieved, add the cinnamon, vanilla essence, baking powder and stir until they are thoroughly mixed in. Mash the banana and stir in then mix in the chocolate chips.

Line a baking tin with baking paper or foil and pour the mixture in. Put in the oven for 45-60 minutes but don\'t open the oven for at least 45 minutes or the cake will collapse. When the cake has a crisp domed surface, it is ready. you can test the cake by pushing a metal skewer into the middle. if the skewer comes out clean, the cake is done. place on a cooling plate for 30 minutes before serving. Enjoy.
