Chicken Pad Thai Noodles
Classic authentic Thai Noodles


Marinade the chicken in the marinade ingredients for at least 15 minutes.

To make Pad Thai Sauce, drain the soaked tamarind in a very fine strainer, then mix the rest of the ingredients, till  you get a spicy/sweet/sour taste mixture. Set aside.

In a heated pan, add  oil, ginger and garlic quickly stir fry it, add the chicken, stir fry it till  it\'s done, then add Noddles, stir fry it for few seconds, add cut up veggies and season it with the Pad Thai sauce,

While pan is really hot and everything is mixed, make a space for the egg in the middle of the pan, and crack the eggs and stir it really quick to ensure everything is thoroughly mixed.

Finally, add chopped parsley and spring onion, then just before serving sprinkle chopped peanuts on top.

¼ kg Chicken Breast cut into thin strips
1 pack Pad Thai Noodles boiled to al-dente
2  Eggs 
1 ½  Red / Yellow / Green Capsicum Peppers Deseeded and cut lengthwise
1 bunch Parsley chopped
1 bunch Spring Onion chopped
3 cloves Garlic crushed
½ inch Ginger coarsely chopped
5 tbsp Unsalted Peanuts chopped
2 tbsp Cooking oil 
For the Pad Thai Sauce
½ block Tamerind break into small pieces and soak in
¼ cup soy sauce 
 pinch Black and White Pepper 
½ tsp Red Chilli coarseley chopped
1 tbsp Brown Sugar 
For the Chicken Marinade
3 tbsp Dark soy sauce 
½ tsp White Pepper 
1 tsp Sesame Oil 
2 cloves Garlic finely chopped
