Procedure :
Pre heat oven about 200 degrees
Soak the walnuts and raisins in 3 tbsp of baileys for at least.15 minutes.
In a mixing bowl, add the flour, butter, sugar, egg, cocoa and lastly baking powder (baking powder loses it's raising power over time so it's a good idea to always add it last minute but always ensure that it's mixed in well),and mix it well. Fold in soak walnuts and raisin, mix it and gradually add remaining baileys. Add water and mix it to a not so runny consistency.
Transfer it to a round baking tin bake for about half hour, or until a good smell comes out from the cake.
Meanwhile while waiting for the cake to cool down, in a microwave heat proof bowl, add butter and chopped chocolate and melt it slowly for at least 2 minutes, and frequently checking it not to burn the chocolate. Once melted, slowly glaze it over the bake chocolate baileys cake. Garnish it with the sweetened young coconut, and enjoy your cake.
